This has been floating around instagram lately and I thought I'd give it a try and share it with you guys. I can eat it everyday. I made some adjustments. I skipped the feta cheese and replaced bulghur with quinoa, and I added peas just because ...and here it is ⠀
The salad is made up of cooked quinoa, drained and rinsed chickpeas, chopped cucumbers, chopped parsely and mint, toasted pistachios and either raw chopped onions or pickled onions (recipe coming out in a few days, put on your notifications so you don't miss it). ⠀
The dressing ⠀
- 2 tbs sesame paste ⠀
- 4 tbs lemon juice ⠀
- 2 tsp raw honey ⠀
- 2 tsp dijon mustard ⠀
- salt & pepper to taste
Mix all the dressing ingredients and add water to get to the consistency you want then pour, mix and enjoy!
