Simple salad recipe

simple salad recipe perfect for diet days when you want to keep things light. You can put it together in a few minutes.

Borghol (borghol wheat) contains gluten but you can replace it with (quinoa) for a gluten free option.

 

Salad Ingredients

1 cup Burghul (soak in room temperature water for 30 mins and sieve)

2 medium size cucumbers (cut lengthways and sliced)

2 medium zucchini (sliced thin with a peeler)

2 Radish (sliced)

 

Throw in a bowl and toss in the dressing below and top with mint leaves, chopped dill, feta cheese and toasted pine nuts.

 

Salad Dressing

1 cup (200 ml) olive oil

2 tbs (30 ml) white vinegar

2 tbs (30 ml) lemon juice

1 tsp (10 ml) dijon mustard

2 cloves crushed garlic

2 tsp (10 g) dried parsley

1 tsp (5 g) dried basil

½ tsp (2.5 g) dried oregano

Chili flakes (optional)

Salt & pepper to taste
