Fareek salad

The only salad I need this summer 🌶🍅

 

Fareek contains more fiber and protein compared to brown rice and when mixed with the sweet juiciness from roasted tomato’s and red peppers you simply have everything you need in a beautiful vegan bowl 😋

 

Roasted Cherry Tomato & Red Pepper Fareek Salad

 

- 900 g cherry tomatoes

- 2 big red peppers, cut in quarters

 

Put all in a roasting pan and drizzle with 1/2 cup olive oil and mix with:

 

- 2 tsp dry thyme

- 1 tsp dry oregano

- 1/2 tsp garlic powder

- 1 tsp paprika

- 1/2 tsp salt

- 1/4 tsp pepper

- 4 whole cloves of garlic

 

Put in oven for 45 minutes. Take out of the oven and peel and cut small the red peppers. Crush all with a fork then toss it in 4 cups of cooked fareek and that’s it ❤️
