The Salad â €
- edamame, boiled & shelled (don't over boil) â €
- peas, boil for a few minutes (keep crunchy) â €
- cucumbers, cut lengthways scoop out the middle and slice â €
- spinachâ €
- dill, chopped â €
- leafy greensâ €
Ginger Soy Dressingâ €
- 1 cup sesame oil â €
- 2 cloves of Garlic crushedâ €
- 1tbs finely grated ginger â €
- 1/4 cup soy sauce â €
- 1/4 cup white vinegar â €
- 1/2 cup lemon juice â €
- 2 tbs honey â €
This is perfect for a light nutrient packed lunch on it's own or a great side dish
