Roasted Aubergine Orzo Salad

Everyone MUST try this recipe! The ingredients are super easy to find, you won’t stop eating it and it’s a serious crowd pleaser 😇

 

Start by boiling some orzo and put it to the side (add some olive oil to avoid it sticking together).

 

Roasted Aubergine

- 4 big, peeled and chopped aubergines

- 1/2 cup sesame oil

- 3 tbs honey

- 1/2 cup soy sauce

- 1 medium, chopped onion (small)

- 1/8 tsp chili

- 1 tsp ground coriander

- 1 tbs fresh grated ginger

- 1/4 tsp pepper

 

Put it in a lined roasting tin and slow roast in the oven at 160 degrees for about and hour or until it’s nice and soft.

 

Mix with the orzo and serve. Can be eaten hot or cold, enjoy!
