I absolutely love this recipe! It's so easy and so quick, you can adapt it to sweet and savoury dishes and it doubles as a crepe recipe too...it's perfect.

For the vegan version, add 250 ml of dairy free milk and instead of the egg add 1 table spoon of psyllium husk. Use the mix straight away as it tends to thicken because of the psyllium husk and make the wraps as thin as you can. If you want the grain free version omit the baking powder (which is a derivitive of corn)⠀

Chickpea Soup for the Soul ✨⠀

It's officially winter and I really needed something warm today... this soup really hit the spot. Swipe for a close up 💛 It's hearty and delicious and takes around 30 minutes to make. Here it is: ⠀

- 1 medium onion (diced) ⠀
- 2 carrots (chopped)⠀
- 2 cloves garlic (crushed)⠀
- 400 ml vegetable stock⠀
- 1 lemon (rind and juice) ⠀
- 1/2 cup coconut cream ⠀
- 1/2 cup water ⠀
- 1 can of chickpeas ⠀
- 2 tsp tapioca (mixed with 2 tbs warm water)⠀
- 1/4 tsp turmeric ⠀
- 1/2 tsp dried thyme ⠀
- 1/2 tsp dried oregano ⠀
- seasoning ⠀
- garnish with parsley⠀

Start off by sauteing the onion and garlic in 1 tbs olive oil till soft. Next, add the carrots and stir on medium heat for 5 minutes. Season with salt and pepper then add the stock, water and coconut cream. Add the lemon juice and rind and the turmeric and herbs and mix. Add the tapioca and water paste and bring everything to a boil then simmer (low heat) for 15 minutes. Check your seasoning and add the rinsed chickpeas and garnish with parsley 🥳⠀
