Happy weekend everyone! I made these lentils today and they were 😋 Lentils are an excellent source of protein and brown rice is a great source of dietary fiber. This meal is filling and nutritious …let’s go ⬇️

Brown Basmati Rice

Heat 1 tablespon of olive oil in a pan and add 1 cup of rinsed brown basmati rice. Add a bit of salt and add 2 cups of boiled water. Let the whole thing boil for 10 minutes then cover and simmer for 30 minutes.

Lentils

- 2 tablespoons olive oil

- 1 medium sliced onion

- 2 cloves of crushed garlic

heat for 5 minutes on medium heat, then add

- 160 grams chopped carrots

- 200 grams raw peas

- 175 grams chopped zucchini

heat for another few minutes, then add

- 310 grams lentils

- Spices: 1/2 tsp salt, 1/2 tsp pepper, 1/2 tsp cumin, 1/4 tsp chilli

- 3 cups of stock

Allow to boil then take it down to a simmer and cover for one hour or until the lentils are tender.

This recipe makes allot of lentils so if this will be a meal for 2 definitely half the recipe. Save this and please tag us with your creations 😍
